Harvest
Still made by hand or with machines browsing facilities maintain an absolute respect for the plant and its products, the harvest takes place in the best period of the drupes inoleizione when olives, although not yet fully ripe to move to oil the most high percentage of substances polyphenols, vitamins and carotenoids.

The Extraction
It takes place not later than 12-20 hours after harvest by simple cold pressing under the wheels of granite or in a continuous cycle plants at controlled temperatures.
The techniques used remain authenticity and ensure the food hygiene standards.
It is thus all the aromas characteristic of these olives, and is not totally altered the precious liquid with its precious quality.
